At LUXE we assume our staff knows how to cook fish because we talk about fish 24hr/7 and work with chefs daily on their menus. However, to witness this in action was another story. We had some leftover halibut filets and what did we do? Our sword hand (guy behind all those killer knife skill videos) trucked in a portable fryer, tortilla shells, salsa, condiments and made crazy good fish tacos for us this Friday afternoon. As @guerillataco would put it, “we were slangin’ fish tacos from our parking lot.” This conveniently gave birth to the idea of serving fish tacos for our Chef Open House.
